Because cheesecake is so rich and creamy, testing it in the center with a
toothpick to see if it's done, like you would with a cake, doesn't work.
The center of the cheesecake should jiggle just slightly when you gently
shake the pan and should still be a bit shiny. As you shake, look at the
edges. There should be about a 2 ½ inch ring that is set and drier
looking than the center. The
